
Lemongrass Chicken & Shrimp with Turmeric Rice
Here’s an easy recipe for lemongrass chicken and shrimp which goes wonderfully with turmeric rice so you can add all the health benefits of turmeric to your diet!
Chicken and/or Shrimp Kebabs (Serves 3 to 4)
You’ll need;
- About 4 lbs of chicken or shrimp. You choose the mix!
- 1 stalk of lemongrass, cut into tiny pieces
- 2 cloves of minced garlic
- 1 minced shallot (small)
- 2 tsps kosher salt
- 1 tbsp olive oil
Cut ¼ to ⅓ inch pieces of chicken and/or fresh shrimp and add to a container with olive oil, salt the minced garlic, the minced shallot, and the lemongrass to marinate for approximately 15 minutes.
Cook everything kebab style on the grill or add it all to a pan for a stir-fry!
Turmeric Rice
You’ll need;
- 1 cup jasmine rice per person
- 1 tbsp butter per cup of rice
- 1 tsp kosher salt
- 1 tsp turmeric powder
Cook the rice according to the package instructions and add in the turmeric powder to give it an extra kick in both taste and health antioxidants!
